Surprise Vanilla Custard

Surprise Vanilla Custard


1 packet Exquisita Vanilla Cake Sponge

3 eggs

220 cc milk

300 grams berries

100 cc water

100 grams sugar

1 Packet Exquisita Vanilla Custard

1 litre milk


Heat the oven at low temperature or 160°.

Butter and flour a cake mould of 24 cm diameter. In a bowl beat the eggs with the milk and add the contents of the Exquisita Vanilla Cake Sponge packet. Blend well and beat for 3 minutes with an electric beater or for 5 minutes manually. Tip the mixture into the mould and bake it for 60 minutes or until a skewer comes out clean and dry. Leave to cool for 15 minutes and remove.

Prepare the Exquisita Vanilla Custard following the instructions of the packet and leave to cool. Tip the water and sugar into a saucepan and heat up until it boils. Stir in the berries and cook for 2 minutes more. Strain and set aside. If you are using frozen berries tip them into the saucepan together with the water and sugar.

Cut the sponge into 4 layers. Cover the inside of a medium size bowl with cling film and then carefully place one layer of sponge inside it. If necessary cut the edges of the sponge so it matches the borders. Pour the syrup into the sponge layer. Blend the custard with the berries and fill in the bowl up to 1 cm before the top. Cut a layer of sponge of the same diameter of the bowl and place it over the surface slightly pressing with your hands. Soak it with the syrup and chill for 2 hours.

Remove from the bowl and serve.
