Stuffed globe zucchinis alla bolognes

Stuffed globe zucchinis alla bolognes

Ingredients:

6 globe zucchinis

3 Tbsp. olive oil

500 grams minced meat

1 cup Gallo Oro rice

½ cup chopped onion

1 red bell pepper

1 carrot

1 Tbsp. minced herbs

1 tsp. minced garlic

½ cup grated parmesan cheese

2 cups tomato sauce

½ cup white sauce

Salt to taste

Pepper to taste

 

Directions:

Cook the Gallo Oro rice in abundant boiling water. Once cooked, strain and set aside.

Cut the top layer of the globe zucchinis and hollow them out.

Cook the zucchinis for some minutes in abundant boiling salted water. The strain and cool them down over a rack.

In a pre-heated skillet fry lightly the onion previously chopped in brunoise. Add the meat and cook until it changes color. Stir in the flesh of the zucchinis, chopped very tiny, and cook until most of the water has evaporated. Then pour out the tomato sauce and the herbs.

Stir in the rice, a bit of white sauce and some dices of soft cheese.

Stuff the globe zucchinis and cover with more white sauce and grated cheese. Place the stuffed zucchinis in a baking sheet with some tomato sauce and cook au gratin.
