Spinach Quick Pudding

Spinach Quick Pudding


Half minced onion

1 packet Granja del Sol Spinach

Salt to taste

Pepper to taste

Ground nutmeg to taste

3 eggs

½ cup grated parmesan cheese

½ cup flour


Heat up a saucepan with a bit of olive oil and fry lightly the chopped onion. Add the Granja del Sol Spinach and cook for a few minutes. Remove from heat and tip it into a bowl. Once it is cool add the eggs, the grated parmesan cheese, a bit of salt, pepper and nutmeg. Blend softly.

Add in two parts the sifted flour, incorporating all he ingredients without stirring too much so it doesn´t get rubbery.

Pour the mixture into a greased and floured pudding mould. Bake it at medium temperature for 20 minutes approximately or until a skewer inserted comes out clean and dry.

Serve warm or cool.
