Roasted Rice


240 grams Gallo Doble Oro rice

4 and ½ cups boiling vegetables stock

Zest from 1 lemon

2 peeled and diced tomatoes

1 bunch basil

7 Tbsp. grated cheese



Step 1

Place the rice in a bowl and add the boiling stock.

Step 2

Let it cool and combine with the lemon zest, the tomatoes, 2 tablespoons of chopped basil and 5 tablespoons of grated cheese.

Step 3

Place it in a deep roasting dish, cover with aluminum foil and roast at medium heat for 25 minutes. Add more stock if necessary. Sprinkle with 2 tablespoons of grated cheese and broil.

Step 4

Garnish with more basil and slices of hard cheese.
