Rice Paraguayan Soup

Ingredients:
1 ½ cup Gallo Oro rice
2 big onions
5 eggs
500 ml milk
3 cups semolina
1 ½ cup coarsely grated semi-hard cheese
1 ½ cup grated cheese
Salt
Directions:
Cook the Gallo Oro rice following the package directions. Strain and let cool down.
Chop the onion and stir fry in a skillet with a drop of olive oil until brown.
Stir the rice in a saucepan together with the onion, the eggs and the semolina. Season with a pinch of salt and mix well.
Butter a deep baking sheet and sprinkle some semolina on it so that the preparation does not stick.
Stir in the mixture and bake at moderate oven (180°) for some 20 minutes or until the surface is brown.
