Rice Frittata

Ingredients
1 cup Gallo Oro rice
1 cup green onion
2 onions
½ Tbsp. chopped garlic
4 eggs
Salt to taste
Pepper to taste
Sunflower or corn oil
Directions
Pre heat the oven at 180°.
Simmer the rice in a saucepan filled with water and a bit of salt. Strain and set aside. Cut the green onion into thin rings. Set aside.
Stir fry the chopped onion in a saucepan with a bit of oil. Once it is transparent, add the chopped garlic and continue cooking until it browns. A few seconds before it is ready add the green onion and remove the saucepan from heat. Transfer the preparation into a bowl and leave to cool. Stir in the rice already cooked and the eggs one by one. Blend until the mixture is uniform. Add salt and pepper.
Heat a saucepan, spray with a bit of oil and pour out the mixture. Stir with a wood spoon and then cook at medium temperature until the base browns a bit.
Bake until it is completely cooked. Serve.
This dish tastes really good one day after its preparation.
