Rice and dried fruits truffles

Ingredients:
2 cups carnaroli Gallo rice
50 grams peeled almonds
50 grams nuts
50 grams dried apricots
50 grams glazed oranges rind
500 grams plain chocolate
5 Tbsp. honey
Directions:
Tip the carnaroli Gallo rice into a pan and fill with 2 cm of water above the level of the rice. Cover with the lid. Cook over medium heat for 20 minutes, until the rice is cooked and the water has been absorbed. Remove from fire and let stand for 10 minutes,
Roast the almonds and the nuts and let them cool down. Crush them together with the oranges and dried apricots.
Tip the rice into a bowl with the honey and the dried fruits, Stir and mix you get a pastry.
Make little balls and set aside in the fridge for about an hour.
Melt the plain chocolate and cover one by one the truffles with it. Once you finish, place the truffles in a baking sheet previously wrapped with film, silpat or folex.
Set aside in the fridge until time to serve.
