Rancher’s eggs, vegetables and rice

Ingredients
1 onion
2 tomatoes
30 grams bacon
1 cup Gallo Oro rice
3 Tbsp. sunflower or corn oil
4 eggs
2 Tbsp. coriander
1 avocado
2 Tbsp. cream cheese or dairy cream
Salt to taste
Pepper to taste
½ chilli chopped
Directions
Simmer the Gallo Oro Rice following the instructions of the Packet. Strain and set aside. Chop the onion and fry lightly in a saucepan together with the copped chilli. Stir in the bacon cut into strips and brown. Add the tomato cut into cubes and finally the rice. Beat slightly the eggs and pour them into the saucepan. Blend the preparation until the eggs are cooked. Season with salt and pepper.
Serve with the Mexican tortillas, avocado and fresh coriander.
