1packet Exquisita Vanilla Cake Sponge
200 cc milk
Pink colouring to taste
Flour to taste (for the mould)
Butter to taste (for the mould)
250 grams cream cheese
300 grams dairy cream
4 Tbsp. Impalpable sugar
250 cc water
300 grams sugar
Pre heat the oven at 160° for 15 minutes.
Butter and flour an oven sheet of 25 cm diameter and 8 cm height. Beat the eggs and milk inside a bowl and add the contents of the Exquisita Vanilla Sponge Cake Packet. Stir well incorporating the ingredients and then beat for 3 minutes with an electric beater or 5 minutes manually.
Transfer 1/3 part of the mixture to another bowl. Stir in the pink colouring and blend with wrapping movements.
Stir both mixtures with a rubber spatula. Check the colour; if necessary add a little bit more of colouring but take into account that after baking the colour looks stronger.
Pour the mixture into the oven sheet and bake it for 60 minutes or until a skewer comes out clean and dry. Leave to cool for 15 minutes and remove.
For the filling, stir the cheese with the berries and the impalpable sugar. Set it aside.
Cut the sponge into 3 layers.
Build the cake alternating sponge layers with the cheese, always starting with the sponge and finishing with the cheese.
When serving decorate it with some berries more and mint leaves. Sprinkle with impalpable sugar.
