Molinos - Croquettes

1 cup Gallo Oro rice

2 onions

3 Tbsp. olive oil

3 eggs

1 green onion

½ chopped chili (without seeds)

1 tsp. baking powder

1 cup grated cheese

½ cup flour

1 Tbsp. chopped parsley

Salt and pepper



Cook the Gallo Oro rice following the package directions. Strain and let cool down.

Chop the onion and stir fry in a skillet with a drop of olive oil. Then, fry lightly the green onion, just a touch.

Tip the rice into a bowl; add the onions, the eggs, the grated cheese, the chili, the minced parsley, and season with salt and pepper.  Mix very well and stir in the sieved flour with the baking powder.

If the preparation is too sticky you may add some more flour, corn starch or grated cheese.

Make the croquettes using two spoons to give them shape. In a preheated skillet with olive oil, cook the croquettes over moderate heat until they get brown.

Serve with some salsa criolla or avocado mayonnaise.
