Chocolate and rice Florentines

Chocolate and rice Florentines

Ingredients:

1 cup cooked Gallo long-grain rice

½ cup nuts

½ cup almonds

2 Tbsp. orange zest

70 grams butter

½ cup sugar

2 Tbsp. dairy cream

150 grams chocolate

 

Directions:

Grind and mix the nuts with the almonds and the sugar. Tip the Gallo long-grain rice into and add the butter, the orange zest and the dairy cream. Mix for some more seconds until you get the dough. Make little balls with your hands and crush them so as to give them a circular shape. Place the Florentines over a baking sheet previously greased and wrapped with baking paper. Set aside in the fridge for some minutes and then bake in a moderate oven for 10 minutes. Remove and let cool down over a rack.

Melt the chocolate and carefully cover half of each Florentine.
