1 packet Exquisita Vanilla Cake Sponge
220 cc milk
300 grams quince paste
1 cup black sugar
Butter (for the baking sheet)
Flour (for the baking sheet)
Heat the oven at low temperature or at 160° for 15 minutes.
Butter and flour a savarin mould of 24 cm diameter.
Cut the quince paste into cubes, stir in a spoon of flour and blend.
In a bowl, beat the eggs with the milk and add the contents of the Exquisita Vanilla Sponge packet. Blend well and beat for 3 minutes with an electric beater or for 5 minutes manually. Pour the mixture to cover half of the mould. Spread the quince cubes over the mixture. Bake for 20 minutes, take it out and sprinkle with the black sugar and a spoon of flour. Bake for 20 minutes more or until a skewer comes out clean and dry.
Leave to cool for 15 minutes and remove. If there is some mixture left, you can prepare another cake with a smaller mould and if desire, you can also replace the quince paste by creamed sweet potato paste.
